Green Goodness

One of my must-haves in life is greens ~ leafy, flower, herb, sprouts ~ all types of edible green goodness! Every week, my basket is always brimming with a variety of my favorites from the Farmer's Market. And now that Spring is here, almost every meal consists of at least one generous serving of these fresh vitamin and mineral packed superfoods.

It's hard for me to narrow down a favorite or two, but if I had to choose one leafy green that I couldn't live without, it would be wild arugula (with kale, watercress and mesclun mix as the runners-up).

Now tell me....what are your favorite greens?

  1. I'm so with you about leafy greens, Melissa! Watercress is my favorite for salads; we have it every week. But I love kale for soups and stews. When I was growing up my dad grew mustard and beet greens, and I still love these, too. Oh, and swiss chard, especially rainbow varieties. How great that these things that are so good for us taste amazing, too!

    That produce looks so wonderful.. Every time I see your food posts I think of all the naughties I have in my fridge and vow to turn over a new leaf.. [oops]... My favourite green is probably broccoli or asparagus... as a child it was peas.. couldn't get enough peas... haha.. Have a great week xx Julie

  4. We eat a lot of leafy greens. I love them all- but right now my favorite is kale. It was a cold, rainy weekend, so I made a big pot of kale, white bean soup. It really hit the spot!
    Looks like a great farmer's market!

  8. I'd have to say broccoli, but even then I don't LOVE it, I just eat it. I wish I loved veggies like you do!

    Your photographs are beautiful. All of those beautiful vegetables.
    I love anything really but my favourites are broccoli, asparagus and I love brussel sprouts. Not everyone does but, I do !!
    I don't think that we have arugula but it could be called something else over here.
    I feel all healthy now just looking at the photographs !!!! XXXX

  21. this is tough. on the salad front i love romaine in the summer. crisp and bright green. in the spring i love the delicate bibbs and oak leafs.

    for braising i love early spring collards the best. sauteed in a little garlic and olive oil and then a few splashes of chicken stock to braise. but sauteed winter cabbage is delightful too.

  22. I'm not picky! But I really miss having a fresh market for fruits and vegetables! I have heard that there are not many in Copenhagen either. Guess I'm going to have to get creative!

  23. Oh you are my kindred spirit. I LOVE arugula. Just had a great dinner with girlfriends and we had a flatbread with pear and arugula and some sort of delicious melted cheese. My mouth is watering right now. Ahhh.

  24. Hi, I love all dark, leafy greens - especially mizuna, bordeaux spinach, kale, mustard and collards. Oh, and Swiss chard! Arugula, too. Roasted, sauteed, in soups, risottos, pestos - so good! Your images are so beautiful.

  32. oh, what don't I love about greens!! Turnip greens might be a sneaky favorite, but just because I get such a kick from having nothing to throw away on delicious roasted turnip nights.

    I'm always so tickled when things look exactly like they do on my plate when they sprout up out of the ground. My wee spring greens bed, it looks like a delicious salad out there, all standing up on its end.

  36. Mel, these pictures are so wonderful and get me even more excited for Spring! We have a 'growers direct' here and it's like a farmers market everyday. I don't know what I'd do with out it. It's inspired me to eat healthier and appreciate fresh produce on a whole new level. I absolutely love fresh greens - all of them! :-))) I'm in the process of researching a wheat grass juicer.. if you have one do you suggest a certain one?
